Neopolitian pizzeria Forbici will be bringing its renowned biga dough and biga crusts to Trafford Centre with a new pizzeria opening in The Orient this summer.
Having launched just over a year ago in Manchester, Forbici has already earnt astonishing praise being named the ‘best ever’ pizza according to celebrity chef Marco Pierre White.
Following the pizzeria’s Sheffield launch this spring, Forbici has announced its third pizzeria at the Trafford Centre’s Orient food court.
Diners can expect Forbici’s signature take on pizza craft with its three-generation Biga dough, slow-fermented to create a light, risen crust with real depth of flavour. Each and every ingredient on the menu is selected for its delivery on taste from sweet San Marzano tomatoes to carefully sourced Italian produce that lets each pizza do the talking. Meaning ‘scissors’ in Italian, Forbici pizzas are cut with scissors in four ways.
Forbici’s Manchester special, the Lancashire Hotpot, will be on offer serving up a delicious mix of fior di latte, lamb ragú and black pepper topped with potato crisps and served on a Forbici biga dough base.
Forbici’s signature creations include classics such as the Marinara, Margherita and American, alongside Italian-inspired creations like the Provola e Pepe, topped with San Marzano tomato, smoked provola, black pepper and fresh basil, as well as indulgent white-base pizzas such as the Porcini e Tartufo, loaded with Fior di latte, porcini mushrooms, Italian truffle sauce and chives.
