This summer, Vermilion is turning up the heat with the launch of ‘An Indian Summer’, a new limited-edition menuinspired by the soul of India.
Bold and nostalgic, the menu is a sensory journey through the country’s diverse culinary landscape, capturing the flavours and textures of India through a modern lens.

Each dish is crafted with a care and reverence for tradition, from the ultra crispy Kurekure Bindi Fries straight from the streets of Mumbai, to the buttery, spicy richness of Pav Bhaji, a beloved street food superstar. Other vibrant starters include Delhi favourite Samosa Chaat and a zesty Masala Fish.
A host of beloved curries star on the new menu, from the tangy tomato-based flavours of a Chicken Jalfrezi, to a rich Lamb Bhuna with a kick, and a golden, garlicky Panch Dal Tadka.
Seafood lovers can indulge in a coastal platter of grilled seabass, prawns, and scallops, served with lemon, marinated green beans, and rice.
To finish, a Trio of Desserts offers a sweet exploration of India’s dessert traditions, bringing together the nutty and indulgent flavours of Moong Dal Halwa, the warmth of Kheer, a creamy rice pudding kissed with cardamom, and the south Asian classic Payasam, which unites vermicelli and milk for a comforting treat.
“This menu is a tribute to the flavours I grew up with,” says Head Chef Siddhesh Raut. “The sizzle of street food, the warmth of family kitchens, and the joy of sharing a meal under the sun. It’s bold, vibrant, and unapologetically Indian. I wanted to take guests on a journey – from the crunch of a Pav Bhaji bun taken from the streets of Mumbai to the slow heat of the Punjab and Bengal originated Lamb Bhuna, to the refreshing seafood platter taken from India’s coastal regions and end with the sweetness of halwa, kheer, and payasam. It’s comfort, memory, and celebration on a plate.”
