Spring has arrived at The Refuge and with it comes a brand-new menu designed for longer evenings, lighter plates, and sharing with friends.
Leading the refresh is a new seasonal twist on the much-loved and award winning ‘Girl Dinner’ offering, first introduced by the restaurant last year. From Tuesday 24th February, The Refuge is serving up the ultimate midweek indulgence: Lobster mac ’n’ cheese paired with a glass of crisp Pecorino wine.

Available every Tuesday from 4:30pm to 7:30pm, Girl Dinner is served in The Refuge’s insta-worthy Winter Garden and offers the perfect after-work treat: rich, comforting lobster mac ’n’ cheese finished with lemon and dill crumb, balanced beautifully by a crisp, refreshing glass of Pecorino. It’s indulgent yet effortless, refined yet relaxed – exactly how spring evenings in Manchester should feel.
The lobster mac ’n’ cheese will also be available as a dish on the main menu, so if Tuesday doesn’t work, there’s still every excuse to come back for it.
But that’s just the beginning…
The restaurant, part of one of Manchester’s most iconic buildings – Kimpton Clocktower Hotel, is proud to unveil a full spring refresh of its main menu. Set within the grandeur of the Kimpton Clocktower Hotel, The Refuge’s spring menu brings together global influences and the best of seasonal British produce. As always, dishes are made with sharing in mind – designed to land in the centre of the table and be passed around between friends.
Chefs Cameron Tetlow and Paul Beckley have put together a spring line-up launching from Monday 23rd February, spanning everything from easy-going nibbles to generous mains and comforting desserts. To start, there’s chilli-marinated Gordal olives for grazing, or whipped smoked feta with broad beans and mint – best enjoyed scooped up with warm flatbread and shared around the table.
New plate highlights Include:
Yellow fin tuna with blood orange and yuzu-sesame dressing – bright and refined
Spring pea risotto with wild garlic and Glastonbury goat’s cheese (V) – seasonal comfort
Corn-fed chicken supreme with borlotti bean cassoulet – hearty and classic
Lamb Keema pudding – with black peas and Madras jus
The much loved triple-cooked chips with Refuge seasoning and cauliflower bravas with aioli are returning due to popular demand, supported by new sides such as tenderstem broccoli with romesco and Pommes Anna served with beef fat emulsion and black garlic.
Dessert keeps that same seasonal feel: there’s Tomlinson’s Yorkshire rhubarb & custard cheesecake with a sharp rhubarb sorbet, a comforting chocolate and banana pudding drizzled with Bumbu rum caramel, and a silky crème caramel served with spiced pineapple.
Vegetarian and vegan dishes are also throughout the menu, making it easy for everyone at the table to find something they’ll love.
And as ever, The Refuge remains a space for all – including four-legged guests.
Dogs can still enjoy their much-loved Dog Roast Bowl on Sundays, while humans can tuck into The Refuge’s legendary Roast platter for two, recently recognised by Lonely Planet’s 2025 England Travel Guide as one of Manchester’s best Sunday roasts.
