Building on the success of their kitchen in Mackie Mayor, New Wave Ramen is planning to open their first permanent site on Tib Lane in Manchester city centre this autumn. They will be serving their signature ramen alongside an evening izakaya menu celebrating native produce with Japanese soul.

The new site at 16 Tib Lane can be found between King Street and Manchester Town Hall, in an area filled with exciting new openings, as well as successful stalwarts of the Manchester restaurant scene.

The two floor restaurant, situated in a historic building, will serve ramen bowls by day that have been inspired by the new wave styles of Tokyo. At night will offer a family style menu of small plates and sharing dishes cooked over sustainable charcoal.

Dishes will include signature ramen bowls and small plates from the binchotan fired grill, alongside sustainable seafood, and a strong plant based selection of dishes dictated by the availability of  local growers. This will be accompanied by a thoughtfully curated wine and sake list, highballs, and local beers, and served to the backdrop of an eclectic playlist.

Joining owners Phil Cook (former CBRB), and Matt Walsh (brains behind Tender Cow) on this project will be Elliott Williams, DJ and member of UK band Editors. There has long been a link between food and music cultures, in particular with ramen, and the group hopes to harness this to create a special atmosphere for customers.

New Wave is bringing together a strong team on all fronts, with experience from Michelin listed restaurants and ramen shops across Europe. The team will be armed with knowledge and passion for Japanese food and culture, and be ready to share this with their guests from October.

The venue will be built on the core principles of Japanese hospitality, with the aim to offer the very best experience for customers. No geishas, no gimmicks. Just the highest level of service, with great food and drinks, all served in a fun and relaxed space.

New Wave’s new venue will launch in October at 16 Tib Lane, Manchester, M2 4JB. Meanwhile, their signature dishes will also be available at their original site at Mackie Mayor, 1 Eagle Street, Manchester, M4 5BU.

New Wave will be hiring for several positions over the next month, as they look to build a strong opening team. They are accepting applications via

They will also be launching a crowdfund on 1st August, with lots of chances to grab the first bowls served at the restaurant, as well as lots of tickets to events, and other rewards. Join the mailing list on their new website to keep up to date with news on the opening.

New Wave is also looking for partners to help with the promotion of their build and opening. If anyone is interested in hosting events in their space, please get in touch via
