New Ewe Restaurant and Bar officially launched on 19th November just in time for Christmas and New Year’s Evebookings.

Ewe has taken over the venue formerly occupied by the India Gate restaurant and will offer modern British and globally inspired dishes along with a warm countryside welcome. A seasonally changing menu will feature classic signature dishes using the best locally sourced ingredients.

Executive Chef Maros Surovka’s menu takes inspiration from the four elements: Earth (with dishes like Shepherd’s pie and beef Wellington), water (seafood and fish), air (poultry-based dishes featuring chicken and duck) and fire (sizzling steaks from the grill). This also covers family favourites such pasta and pizza, as well as vegan and vegetarian options available.

An a-la-carte all day menu includes comforting favourites like ‘Ewe’ shepherd’s pie and truffle mac and cheese, and there’s a special lunch menu and Sunday roast offering. For festive meet ups and celebrations there is a Christmas party menu, plus 6pm New Year’s Eve and 9pm New Year’s Eve menus available.

Drinks include a range of theatrically served cocktails with quirky rural names including Smoking Tractor, Wheelbarrow, In the Meadows, and Pink Ewe.

Brought to, er, ‘ewe’ by the team behind Manchester’s successful ‘Yours’ restaurant and bar, Operations Manager is Nathan Baxter, who has previously worked for Neighbourhood and Victors, and GM is Remi Khodr, who was part of launch team for Salford’s successful The Black Friar gastropub.

Ewe Restaurant and Bar can host up to 150 customers. Its rural, cosy feel has been achieved by incorporating wool textures and wood beams – and it’s been fully dressed to suit the upcoming festive season. In 2023 the venue will also open an outdoor terrace with stunning views overlooking Rivington Pike, which would be ideal for wedding pictures.

Operations Manager Nathan Baxter said: “We are so excited to be officially open! We’re so happy to be welcoming guests to enjoy this unique dining experience in the heart of rural Bolton. We’re proud to be using quality, local suppliers and to be bringing something special to the community. The name Ewe was inspired by our countryside location and also our mission to offer a unique dining experience. ‘Ewe’ definitely won’t be disappointed!”
