As the season’s change and winter approaches, Albert’s Schloss has revealed a
rugged and rustic winter menu, Return to the Alps, inspired by the mountain regions of Switzerland, Austria, Germany, France and Italy.

The rich cuisine found in the mountainous regions of the Alps originates from a time when mountain villages were isolated for months during long, snowy winters. Villagers survived on the Alpine food they could produce themselves and what preserved well throughout the season from locally made cheeses and meats to filled pastries.

Bringing the very best of the mountain regions to the Cook Haus, the winter menu is a distinctly modern take on classic dishes served in Alpine Europe.

Winter menu highlights include a host of tempting smalls bites such as French onion soup, slow-cooked bier onions soup with sourdough and gruyere croute, Alpine croquettes sauerbraten with braised featherblade of beef, gherkin and cucumber relish and forest mushroom with chèvre and truffle mayo.

Larger plates include baked Alpine cheese souffle – alpine cheese sauce, caramelised onions, endive salad, toasted walnuts and local honey dressing, Black Forest bacon, egg and chips – 10oz spiced bacon chop, dark bier onions, fried duck egg and triple cooked chips and Kreuzberg chicken kebab – yoghurt marinated spiced chicken, hummus, cucumber and toasted almonds.

For an indulgent and true taste of the Alps, the raclette burger – 28 day aged Cheshire beef, melting raclette cheese, chicken liver pate, rocket, truffle oil, red onion marmalade and served on a brioche bun.

Tempting sides include maple-glazed root vegetables – roasted parsnip, celeriac, carrot and beetroot and charred broccoli.

For dessert, the Pudding Klub offers an indulgent choice of sweet treats, from gingerbread caramel and nougat cheesecake to passion fruit and clementine baked Alaska – the sweetest klub you will ever join.

Albert’s Schloss will celebrate truth, beauty, freedom and love for with 7 Days of entertainment for the Wintermarchen season, including music, art haus performances, kabaret and all the usual Schloss shenanigans, complete with cook Haus, biers and cocktails.
