Climat, the highly anticipated 100-cover restaurant opening at Blackfriars House on Monday 5th December has revealed a first look at its ever-changing, daily menu.

The restaurant is latest venture from the team behind Covino, the Chester venue which has earned a mention in the prestigious Michelin Guide.

Manchester’s latest restaurant hotspot will offer panoramic views of the city. Climat hopes to hit the spot where casual dining meets ‘contemporary Parisian-style’ aesthetics. An extensive list of over 250 different wines will lead the Climat dining experience, delivered alongside exciting daily changing menus in a relaxed and informal atmosphere with a quietly knowledgeable style of service.

Developed by Exec Chef of Covino and Climat, Luke Richardson, and Head Chef Simon Ulph, the menu approaches modern British cuisine with influences from all over the world. Using the best produce available, the kitchen team have created ‘food you want to eat’, or what Richardson describes as ‘Parisian expat food’.

After a successful trial at Covino, ‘feasting-sized dishes,’ such as whole turbot or slow cooked lamb shoulder designed for three or more people to share, will be a prominent feature on the Climat menu.

Covino’s successful small-plates offering has inspired the more encompassing menu format of Climat, with a small selection of snacks alongside a selection of larger plates, dictated by the best produce available that day.

From Middle White pork loin and mutton kofta, to ex-dairy cuts on-the-bone for the table to share, Climat’s menu allows guests to create a totally bespoke dining experience. This creates a more casual, less restrictive and ultimately more enjoyable atmosphere thanks you get with your standard choice of three courses.

Resurrecting a cult classic, a seasonal range of filled vol-au-vents will also become a staple of the ever-changing menu.

“We want to have a different signature snack at each restaurant we open,” says Exec Chef, Luke Richardson. “Whilst Covino has the gougère, Climat will have the vol-au-vent, owing to their complete versatility throughout the seasons. They can literally be stuffed with anything – beef tartare, parfait, truffle and ricotta to name just a few.

“Both me and Simon Ulph have worked closely together to develop an opening menu we are both super proud of and we think does justice to the building and the surroundings. We believe we offer something completely different to the Manchester restaurant scene and we now can’t wait to officially launch.”

From the daily bar snack menu, guests can expect fresh malted loaves, seasonal oysters, fried swede and charcuterie to be enjoyed alongside a comprehensive wine cellar.

The restaurant will be open Monday 5pm – 11pm, Tuesday to Saturday 12pm – 3pm, snacks will be available in-between before the kitchen reopens 5pm – 11pm. Sunday, the kitchen will be open 12pm – 8pm, with the bar remaining open until 10pm.

The name ‘Climat’ derives from the term used to describe a single vineyard site in Burgundy, which has its own microclimate and specific geological conditions. It’s the region that 40% of the wine list will be allocated to. From some of the world’s best Chardonnays and Pinot Noirs, to the region’s lesser-known varieties and appellations, the cellar team will be on-hand to help guide and pour your way throughout your visit.

The list of over 250 different cuvées will be diversified by the remainder of the cellar’s wines from around the world. Expect to find at least 15 different growers Champagnes and the exciting wines of Jura, helped along by other favourite wine varieties and regions. There’ll be a variety of styles and price points, made up largely of lesser-known small producers, as well as rare icons, back vintages and large formats.
