Honest Burgers are launching a brand new regional special, the Wellington, as an exclusive and permanent burger to their Bridge Street Manchester restaurant. 

Inspired by the iconic dish, The Wellington burger comprises the classic Honest beef patty and smoked bacon, topped with 12-month-aged rich and creamy Owd Yonner Lancashire cheese, béarnaise butter, crispy gluten-free pastry, bacon gravy, mushroom duxelles, baby spinach and pickles, all for £13 including a portion of homemade rosemary chips on the side.

The burger can be made entirely gluten-free by adding a gluten-free bun at no extra cost.

The Wellington burger has been over a year in the making, with Kris from the Manchester kitchen team tasting over 15 of the best cheeses from Greater Manchester and Lancashire with local hero Jonathan Pearcey, AKA The Crafty Cheese Man.

The Honest team then sought the advice of I Love MCR to join the tasting panel, resulting in a hyper-local special that has become one of the team’s favourite burgers to date. The Wellington is best enjoyed alongside Manchester-based Alphabet Brewing Co.’s A to the K American-style pale ale.

“Beef Wellington has been my favourite dish to make since I was 16. Fresh out of school my first test as a chef was to prepare a Wellington for a corporate dinner. It was a success so I kept on making them – Christmas, birthdays… any excuse! It’s the big reveal to show the medium-rare beef,  like opening a present. The challenge with a Wellington burger was getting the pastry element in. Inspired by our shoestring fries, I sliced gluten-free puff pastry into sticks and deep-fried them. Together with the Owd Yonner cheese, it does a great job of adding pastry crust buttery richness.”

The Wellington burger is exclusive to Honest Burgers Manchester, and is also available via click + collect, Deliveroo and Uber Eats.
