Last month, we revealed that Rudy’s Pizza Napoletana was to open its first Pizza Academy and restaurant taking over the former 8,000sqft Dawsons Music & Sound site on Portland Street.

Rudy’s has announced that the opening date for its latest Manchester city centre pizzeria will be Saturday 6th May for diners, with the pizza academy opening later this summer.

Since they began serving their classic Neapolitan pizza from the original Rudy’s in Ancoats in 2015, the acclaimed pizzeria has since opened 17 sites across the UK. The new 120-cover pizzeria in Portland Street will be its sixth location in Manchester.

Some of Rudy’s all-time favourites on the menu include:

  • The spicy Calabrese with San Marzano tomato, fior di latte, basil, extra virgin olive oil, Parmesan and spice ‘nduja sausage
  • The meaty Carni with San Marzano tomato, fior di latte, Parmesan, salame finocchiona, salame picante, wild boar salame, basil, extra virgin olive oil and fresh chilli
  • The white pizza Porchetta with fior di latte, roast porchetta, sage roasted potatoes, smoked mozzarella, caramelised white onions, cracked black pepper and rosemary oil.

Complementing Rudy’s pizza menu is a range of Aperitivo perfect for pre-pizza drinks, including the classic Aperol Spritz, Espresso Martini, Rudy’s very own Blood Orangecello Mimosa and more. A selection of Italian wines also available.

Born out of passion for pizza, Rudy’s follows the authentic Neapolitan tradition of pizza making, serving classic recipes such as Marinara, Margherita and Calabrese – all originating from Naples, the birthplace of pizza.

Rudy’s dough is made fresh daily using Caputo ‘00’ flour which ferments for at least 24 hours, alongside the best quality ingredients imported from Naples, including San Marzano tomatoes grown on fields next to Mount Vesuvius, and Fior di Latte mozzarella.

All accordance to a truly authentic Neapolitan technique, the dough is cooked in a Stefano Ferrara oven for just 60 seconds – resulting in a soft and light pizza with an airy and raised cornicione (the edge or rim of the pizza).

Alongside the pizzeria, Rudy’s new location at Portland Street will be home to Rudy’s Pizza Academy launching later this summer, and the HQ for Rudy’s Bake at Home back by popular demand and soon to re-launch in late June.
