Sourdough bakery, Holy Grain, has opened its doors on Great Northern’s independent business hotspot, Deansgate Mews.

Whether you call it a barm cake or a bread roll, there is sourdough for everybody at the new micro-bakery. Holy Grain specialises in slow-fermented, naturally- leavened, organic bread which is lovingly made using no machinery except an oven.

Owner, Danny Foggo, discovered his passion for baking whilst living in Mexico, where he could never find the perfect loaf. Upon his return to the UK, Danny trained at the famous sourdough bakery, E5 Bakehouse, in Hackney before launching his own bakery, Holy Grain.

Danny has a truly progressive way of running Holy Grain. Six days a week he dedicates himself to experimenting with different recipes and techniques to create innovative bread which pulls inspiration from around the globe.

Doors then open to the public every Saturday, where his successful batches are available to purchase.

On the launch of his new venture, Danny Foggo said, “Holy Grain operates as a test bakery, dedicated to extending knowledge around the art of baking bread. The feedback of customers on the breads is of utmost importance to me as this helps to develop Holy Grain’s ever-evolving menu. Holy Grain isn’t just a culmination of my own passion for bread but of the people of Manchester’s as well.”

Holy Grain prides itself on its handmade sourdough bread however in 2020, visitors can expect beautifully baked brioche, cinnamon buns and cardamom buns. With loaves starting at £2.80, there is something for everyone to enjoy.

Taking pride of place on Deansgate Mews, the innovative bakery neighbours fellow artisan retailers Alex’s Bakery, Dormouse Chocolates and Platzki.

Centre Director for Great Northern, Mark Schofield, said, “Holy Grain sourdough bakery is a perfect fit for the Deansgate Mews, the Great Northern’s independent business hub. Daniel has been working tirelessly to create the bakery he’s always wanted; I’m sure everyone will enjoy eating his bread as much as he enjoys baking it.”

Holy Grain is located on The Great Northern’s Deansgate Mews and is open every Saturday from 09:00 until sell out.
