A café and wine bar specialising in high quality Greek and Mediterranean food is set to open in Salford this autumn.

Owned by hospitality professionals Ioanna Antoniou and Ivan Milchev, Kallos Café & Wine Bar will open in new development Cortland at Colliers Yard, located between Trinity Way and Deansgate and next to Abito.

Kallos draws inspiration from authentic Greek life, adding a Mediterranean twist to brunch classics throughout the day. The brunch menu is divided into sections featuring traditional pastries like Spanakopita and Tiropita, dishes served on sourdough, and those on freshly in-house made pita bread.

In the evening, the wine bar and meze selections go back to the roots of Greece, starting with classic Greek dips followed by a “to share” section, with traditional dishes like Feta in Filo, Saganaki, and Keftedes. The menu also includes classic charcuterie boards and signature Greek & Dakos salads. You will also be able to savour premium quality of tinned fish, carefully selected to deliver the rich, genuine flavours of the Mediterranean.

The interior combines vintage and contemporary details to create a relaxed and welcome ambience, where guests will be able to enjoy simple small dishes done brilliantly well throughout the day and into the night, using great products and introducing wines from the sun-drenched lands of Greece and the Mediterranean basin.

Kallos will also serve Dark Woods Coffee, who only roast speciality grade beans sourced carefully from some of the best farms in the world.

Ioanna and Ivan, who collectively boast 20 years of experience in the industry, have both held managerial positions in fine dining establishments across Manchester. Ivan, in addition to his managerial role, served as Head Sommelier for three years. Now, with their wealth of expertise, they feel it’s time to embark on their own journey —a journey fuelled by passion, dedication, and a shared vision.

Ivan said: “The name Kallos was inspired by the ancient Greek word for beauty, which perfectly encapsulates the essence of this café and wine bar for us. It’s not just about the aesthetics but also the experiences shared and the hospitality offered, which we see as a real priority. The beauty (Kallos) is about shared laughter, the stories exchanged and the connections made.

Ioanna said: “Kallos Café & Wine Bar has been a dream of ours for a long time coming and we’re so excited to turn it into a reality this autumn. We wanted to create a venue focused on hospitality, a relaxed atmosphere, an all-day offering and a menu serving the authentic Greek and Mediterranean food.
