North-West independent restaurant Maray has enjoyed a buzzing first nine months in its Lincoln Square location. Maray has become a city-centre staple just like its two original sites in Liverpool.

Taking inspiration from the charming Parisian cultural hot spot, Le Marais, the menu offers a range of delicious Middle Eastern dishes, cocktails and wines.

Now the sun has tentatively begun to show itself, Maray have wasted no time announcing a range of new menu items designed for the warmer seasons. These will be available across all three restaurants from the 18th April.

They’ve matched the best seasonal ingredients with great aromatic flavours in a menu which caters for pretty much all dietary preferences and requirements. The kitchen team is particularly excited about the new vegan fried aubergine dish complete with green tahini, vine tomato salsa, agave and crispy kale. They’ve also introduced seabass with rainbow chard, pea purée and broad beans, which co-founder Tom White has described as “spring on a plate”.

Picture yourself watching the world go by on Maray’s outdoor terrace grazing on hot dips and pickles, paired perfectly with an aperitif. Hearty main options include steak, crispy squid and fried chicken with house made ginger ketchup. Each of the new dishes also compliment Maray’s really interesting range of wines, which feature bottles from Lebanon, Georgia and other Middle Eastern regions.

Maray’s dessert menu also has some exciting new additions including a vegan chocolate sesame tart and a baklava cheesecake which became a permanent fixture after its successful trial run over Mother’s Day weekend. It features a sticky baklava base flavoured with sumac, pistachio and salted caramel and is soon likely to join Maray’s famous Disco Cauliflower as one of their go-to signature dishes.
