The award-winning team behind Manchester’s beloved Neapolitan pizza institution, Ciaooo, have announced the launch of a brand-new sister concept: Ciaooo By The Slice. Opening this month in the heart of the city centre, the new spot will bring authentic Romana pizza al taglio to Manchester for the very first time.

Pizza by the slice isn’t new to the city – but Roman pizza is. Baked low and slow on large trays in an  electric oven, then cut into generous 9×6” slices, pizza al taglio (which translates to “by the cut”) is known for its crispy base, light and airy dough, and fresh Italian toppings. It’s a completely different experience to Ciaooo’s classic soft and chewy Neapolitan – and a first for Manchester city centre.

Ciaooo By The Slice will serve a daily line-up of eight flavour-packed toppings, from pulled pork and truffle oil, pepperoni and homemade hot honey, to being loaded with a fresh chicken salad (a Roman staple), alongside Margherita and Marinara-based vegetarian and vegan options. Staying true to the original Ciaooo’s reputation for pushing the boundaries of what pizza can be, the team are promising to bring the same energy to their new spot – with monthly specials curated by head chef Stefano.

The menu will be ever changing; with a lineup that depends entirely on the freshest ingredients available to the team through their trusted suppliers – coming straight from Italy. Slices will be priced from £4, served in custom boxes for one or up to four slices – perfect for mixing, matching, and sharing with mates (or not).

The new venue, located in Shudehill replaces Ciaooo’s Loaded Garlic Bread, a former site that proved popular with fans of Ciaooo’s cult starters. But with diners continuing to choose the original restaurant for pizza and garlic bread together, co-founders Stefano Mordecchi and Lory Grigorie saw an opportunity to try something different – and return to their roots.

Originally from Rome, the duo previously ran two Roman Pizza shops in the capital, with Stefano training under renowned Roman chef, Gabriele Bonci. After moving to Manchester, Stefano earned his crust as head pizza chef at Double 00 in Chorlton, before launching Ciaooo in 2018. The brand quickly developed a loyal following for their creative Neapolitan pies and fully loaded garlic breads. With the launch of By The Slice, they are going back to where it all began.

“We’ve always been passionate about Roman pizza – it’s where we started,” said Lory. “Opening Ciaooo Loaded Garlic Bread gave us the chance to try something new, and while people loved the garlic bread, they still wanted great pizza too. That made us realise it was time to bring something different to Manchester – something that really reflects our roots and what we love.”

In addition to pizza, Ciaooo By The Slice will serve Lory’s handmade tiramisu – a fan favourite in its own right – in flavours including Classic, Biscoff, Pistachio, and Kinder Bueno and also serving up a rotating special – kicking off with a combination of banana, salted caramel and crispy pancetta. An indulgent treat, served in bespoke and branded, travel-friendly tins, these tiramisus are ideal for enjoying in, grabbing on the go, or taking home – for those with strong willpower. A range of soft drinks, including Sanpellegrino lemon & orange and apple & orange juice will also be available.

Ciaooo By The Slice will be located in the heart of the city, at 93–95 Shudehill, M4 4AN; just a 2 minute walk from Shudehill bus station & tram stop and 6 minutes from Manchester Victoria.

Opening hours will run from 12pm–10pm, Monday to Sunday – making By The Slice the perfect pitstop for a quick lunch, easy dinner, or post-pint snack.
